Since February 2024, culinary director Patrick Bittner has been at the helm. Concept Fine dining with a health focus in a luxury hotel set amidst nature. À la carte selections and sharing dishes. Culinary Style Patrick Bittner (formerly at the Français in Frankfurt), as culinary director, focuses on classic French dishes with a modern twist—relaxed, contemporary, and cosmopolitan. He serves, for instance, a wild herb garden salad with escabeche-style vegetables and honey vinaigrette. He prepares intense vegetable stocks and crafts luscious sauces even without heavy butter additions. There is no compromise on duck liver pâté with green tomatoes and spiced brioche, nor on oysters (Gillardeau and Utah Beach). A popular take on a classic: Dombes quail, baked praline-style, served with sweet wine-glazed chicory and couscous. Wine An extensive and substantial wine list.
