Under Markus Köstinger, the team builds each menu around the agricultural output of Thurgau and the surrounding lake basin. The kitchen treats this classic Swiss cuisine with quiet precision, drawing directly from nearby farms to shape the daily offerings.
Appetizers often begin with robust flavors, such as an apple curry soup served alongside heavily seared prawns. A second option pairs wild garlic cream with delicate asparagus tips and tender veal sweetbreads. Main courses highlight the area’s livestock, featuring butter-soft Thurgauer pork accompanied by ginger cabbage, traditional napkin dumplings, and a rich Thurgados reduction. Sweet finales arrive as Tahitian vanilla foam resting over raspberry and rhubarb compote.
Architect Thomas Graf designed the dining space to mirror the gentle topography of the border landscape. Floor-to-ceiling windows flood the room with daylight while casting views toward the adjacent golf course. The interior palette relies on calm browns and creamy neutrals, punctuated by a striking gold feature wall that catches evening light. A massive living plant installation in the adjoining lobby guides visitors quietly into the restaurant.
