The story
Pivovar Červený vlk in Kurort Oberwiesenthal approaches mountain cuisine through a shared vision between two long-time collaborators who began planning their project in 2016. They launched the minbrewery and attached dining room in May 2020, designing a structure that respects local architectural traditions while maintaining modern technical standards. The space functions as both a production facility and a gathering place, complete with outdoor terraces that overlook the forested slopes.
The kitchen draws heavily on regional brewpub fare, pairing robust brewing traditions with straightforward seasonal preparations. Gault & Millau noted how the team handles classic dishes with precision, such as duck served alongside fermented cabbage or tender sirloin simmered in a rich cream reduction. Their signature dumplings provide a sturdy base for these hearty sauces, while the tasting trio of meat tartare, crackling spread, and pork knuckle terrine showcases careful attention to raw ingredients. A simple poppy seed and plum filled pastry finished with vanilla sauce rounds out the menu without unnecessary complexity.
Clean lines and warm wood tones define the dining room, creating an environment that feels grounded rather than ornate. Regular visitors appreciate how the layout accommodates both quiet conversations and lively group gatherings around the bar. The service team maintains a relaxed pace that matches the surrounding landscape, treating guests with steady hospitality regardless of whether they arrive for a quick pint or a full meal. Natural light floods the terraces during summer months, reinforcing the connection between the kitchen and the mountains outside.
