In the town of Lahr, at the foot of the Black Forest, the Fehrenbacher family runs a hotel-restaurant with two distinct dining experiences. The Adler-Gasthaus serves regional dishes, while the Gourmetrestaurant offers refined, Modern French cuisine that has earned a Michelin star. Chef Daniel Fehrenbacher and his team create menus that change with the seasons, drawing on the bounty of the surrounding region.

The restaurant’s connection to its setting is clear. “So vielfältig wie der Schwarzwald, so vielfältig sind auch die Köstlichkeiten,” the team notes, meaning the diversity of the Black Forest is reflected in the food. Special events like fish weeks in the Gourmetrestaurant and a large kitchen party in October highlight the kitchen’s versatility and commitment to seasonal ingredients.

An Inside Look at the Kitchen

For those who want a deeper experience, Adler offers a Chef’s Table. Guests sit in the kitchen itself, watching the cooks at work while enjoying 15 tasting portions from the Michelin-starred kitchen, paired with wines and other beverages. This intimate setting, limited to three guests per evening, provides a rare view into the precision and craft behind the Modern French cuisine.

Private Dining and Local Hospitality

The Adler property also features the Adlersaal, a generous hall for events from 20 to 100 guests, and offers catering and fingerfood packages for private celebrations. Concept Fine dining in a family-run establishment with an attached hotel. À la carte and a tasting menu with 4 to 9 flexibly selectable courses – you can also order three appetizers and two desserts. Culinary Style Seasonal Baden-French haute cuisine. A classic is the refined duck liver terrine with fig and port wine. The duck liver later reappears as one of the components of the Lièvre Royale, wild hare in its blood sauce, considered a masterpiece of French game cooking, and served at the "Adler" generously accompanied by parsley root and mushrooms. Perfectly cooked turbot pairs beautifully with crisply fried sweetbread, finished with a hint of egg yolk and subtle caper acidity. Wine 300 selections featuring numerous premium wines from Baden and France. Sommeliers Kerstin Fehrenbacher and Jochen Hünd provide expert guidance as a team. Atmosphere Colorful artwork hangs in the warmly lit dining room. The chairs are upholstered in a soft red, complemented by snow-white tablecloths on classic deer-brown tables.
