The story
In the small wine village of Klingenmünster, just outside Landau, the Gasthaus zum Adler has been a family landmark since 1869. Today, sisters Christine and Franziska Baumann run it in the fifth generation – and they have given the old Gasthaus a fresh, personal direction. The restaurant earned a Michelin Recommended distinction in 2026 for its creative, seasonal cooking.
Christine Baumann cooks. She trained at the five-star Hotel im Wasserturm in Cologne, spent time in its two-star restaurant La Vision, and won the Rudolf Achenbach Preis for young chefs in 2013. In 2014 she placed third in the Hans Büschkens Young Chefs Challenge in Norway. She later worked at starred restaurants La Poêle d’Or in Cologne and Redüttchen in Bonn. Franziska, who studied business economics, lived in Guatemala for twelve years and brings that Latin American influence to the table – both in the kitchen and in the service.
Together they took over the family business in 2019, completed a full renovation of the property, and reopened the Adler in autumn 2023. The result is a space that feels both rooted and alive, with a warm, unpretentious atmosphere.
The menu changes monthly, always seasonal and regional, with a light Latin American accent. A March à la carte selection shows the range: a starter of wild herb salad with papaya, cottage cheese, and sunflower seeds; a Taco with Merguez, red cabbage, and coriander. Mains include Teres Major steak with chimichurri, avocado, and black beans, or a Lachsforellenfilet (trout) with Aji Amarillo amarillo sauce, Savoy cabbage, and Jerusalem artichoke. There is a vegetarian Tagliatelle with wild garlic, spinach, almonds, and Pecorino. Dessert might be carrot cake with sea buckthorn, puffed quinoa, and sour cream ice cream. A set menu, from three to four courses, is also available.
The drinks list follows the same philosophy: regional wines from Palatinate winemakers, local beers, homemade lemonades, and a few Latin American spirits.
The Adler is a true Gasthaus – informal, welcoming, and built around the seasons. Outdoor seating is available, and the kitchen is happy to adapt for vegetarian guests. The Michelin inspectors noted the honest, well-executed cooking and the genuine hospitality. It is a place where a family story, a chef’s ambition, and a dash of Latin America come together on a plate – without fuss.
