The story
Christian Knefler and his wife Eva Maria have dedicated themselves to the craft of cooking since early on. "Kochen ist ein Handwerk," they say. Their professional path led them through several international starred kitchens: Hotel Bareiss, Restaurant Giardino, Jöhri’s Talvo, and Vendôme. Around twenty years ago, they fulfilled a shared dream: to reinterpret their wealth of culinary experience in the cozy, rustic atmosphere of a traditional Weinstube. The result is Weinstube Brand in Frankweiler, a place of unpretentious enjoyment where guests can settle into the wood-paneled dining room (seating up to thirty) or, in good weather, the charming inner courtyard.
The kitchen’s approach is rooted in craftsmanship. Fresh herbs provide refined seasoning, while carefully made sauces and reductions complement seasonal ingredients sourced from the region. The wine list, too, draws entirely from local producers. This commitment to regionality and seasonality is the foundation of their country cooking, which blends Pfalz traditions with Mediterranean influences. The Michelin Bib Gourmand recognizes the consistent quality and value of this cooking, and guests regularly return for the inviting, straightforward hospitality. As the Michelin guide notes, the food is "fresh, seasonal, and truly good."
The menu changes with the market, with daily specials written on a blackboard. Among the classics are a well-executed Rumpsteak in various preparations, homemade ravioli, and a warm chocolate cake that has become a favorite. Seasonal game dishes and fresh salads also feature prominently, all prepared with the precision expected from a kitchen with such a pedigree. Game and wine come from the surrounding Pfalz region, and the daily specials often highlight the best of the season. The cooking is both refined and approachable, a true reflection of the Weinstube spirit.
