The tasting journey opens with amuse-bouches like a crispy blue lobster tuile sprinkled with flowers. It arrives alongside a lemon foam and a fried bite featuring salty ham and truffle foam. Raw marinated char follows, accompanied by Oscietra caviar, intense char roe, and daikon radish. The kitchen pours a dense bouillabaisse tableside over monkfish and chorizo aioli, then shifts toward Alpstein duck with root vegetables. Sweet and savory notes converge on Wagyu Beef A5 paired with fermented garlic jus before a plum variation closes the meal.
Apollo sits inside the family-run Hotel Grischa, which the Dutch Parrée family has welcomed guests to since 2011.
