Seasonal ingredients take center stage. Lunch features options like yellowfin tuna with umeboshi plum, yuzu, and coriander, or winter cod with saffron-fennel stew. Dinner expands with dishes such as Maine lobster with beans, pear, and lime; “Omble Chevalier” char with sweet potato and garam masala; and a one-hour egg “Carbonara” with fregola sarda. Desserts include Valrhona chocolate with salt nougat and tiramisu foam, or a Tarte Tatin of pineapple with coconut and passion fruit.
