The story
At Fangfrisch in Lübeck, the name says it all. This restaurant, set along the Trave river in the city’s historic harbour, is built on a simple promise: seafood that is genuinely fresh. The kitchen works with regional suppliers, and since 2021 the restaurant has held FEINHEIMISCH certification, meaning the vast majority of ingredients come from the surrounding area. “Everything we serve, we love to eat ourselves,” the team says—and it shows. The Michelin inspectors have taken note too, awarding the restaurant a Recommended status for 2026, a nod to its consistent quality and honest approach.
The menu leans heavily on the waters of the Baltic and North Sea, prepared with a modern, Nordic sensibility. Classics like the Backfisch—a crispy Wels fillet in a Moinsener beer batter, served with rustic fries and house-made remoulade—are a staple. For something more refined, the Stör und Kaviar pairs a pan-seared sturgeon fillet with a creamy Bärlauch-Hollandaise and caviar from a local fish farm. The Lübecker Labskaus, a traditional sailor’s dish, comes from a family recipe and features corned beef, a fried egg, and pickled herring. Even the drinks list reflects the restaurant’s roots: their own Moinsener Pils, brewed in Lübeck, is a crisp, hoppy companion to the food.
Fangfrisch is not just a restaurant. The same crew, now over 60 strong, runs a food truck, a catering service, a small brewery, and even a line of house-made spirits. The atmosphere is “nordisch, rustikal, modern”—wooden tables, a relaxed harbour view, and a crew that clearly enjoys what they do. Whether you come for a full dinner or just a fish sandwich from their Brötchenbude (open daily from 11:00 until sunset), the dedication to regional seafood is consistent.
