The story
Since October 2024, the FAVORITE parkhotel in Mainz has been home to a new destination for Japanese cuisine: the Sushi Lounge. Located within the hotel’s weinbar, this intimate space is led by sushi master Jakob Meder, who presents a menu of refined Japanese creations. The restaurant has earned a Michelin recommendation, a recognition that speaks to the quality and precision of the food served here.
The atmosphere blends the casual elegance of a wine bar with the focused craft of a sushi counter. The menu is built around fresh, high-quality ingredients, offering a range of classic and signature dishes. Guests can choose from detailed sushi and sashimi variations, including a vegetarian option. For those seeking a curated experience, the three-course surprise menu lets the chef guide the meal, with 18 pieces of sashimi, nigiri, and maki.
Standout signature items include the Sake Aburi (flamed salmon with honey mango sauce and trout caviar), the Otoro nigiri (bluefin tuna belly with caviar), and the Crispy Tuna Maki, which combines chopped tuna with fried avocado and spicy sauce. The restaurant also offers a selection of hot dishes, such as tranches of beef fillet marinated in soy and garlic, and fried brook trout with shimeji mushrooms. Sushi is available for takeaway, and the team also hosts special pairing events, such as the "Sushi und Wein" evenings, where the weinbar’s expertise meets the sushi menu.
The Sushi Lounge is open Tuesday through Saturday from 18:00 to 22:30, with Sunday and Monday as rest days. It is a welcome addition to Mainz’s dining scene, offering a focused, high-quality Japanese experience in a relaxed setting.
