On the sixth floor above Mannheim’s city centre, OPUS V brings a distinct culinary vision to life. The team calls it Urban-Nature Cuisine: a kitchen style that weaves together the energy of urban life and the raw beauty of the natural world. Regional and seasonal ingredients take centre stage, transformed into modern, innovative dishes that balance a wide spectrum of flavours.
The restaurant holds two Michelin stars, a recognition of the precision and creativity at work here. The kitchen is led by chef Dominik Paul, who joined OPUS V shortly after its opening in 2013. Paul trained in the Black Forest at the two-starred Le Pavillon and brought that experience to this ambitious project over the rooftops of Mannheim. His cooking is defined by excellent produce, unconventional techniques, and a deep passion for outstanding taste.
Guests can choose from several menus, each designed to tell a story through carefully composed courses. The six-gang Urban-Nature menu, priced at 249 €, is the fullest expression of the kitchen’s philosophy. A recent edition opened with a venison consommé, followed by an amuse of veal, Parmesan and horseradish, then moved through dishes like char with kohlrabi and coriander, beetroot with keta caviar and sake, and zander with cauliflower and ice plant. The meal closed with matcha, coconut and yuzu, and petits fours of salted caramel-lime, lingonberry, and pear-tonka bean.
A three-gang evening menu and a four-gang Chef’s Choice menu are also available, with optional wine pairings or alcohol-free accompaniments curated by the sommelier. À la carte options include beef tartare with caviar and myoga, and carabinero prawn with green papaya and galangal.
OPUS V occupies a bright, modern space on the top floor of the engelhorn department store. The large rooftop terrace opens in summer, offering a sweeping view over the city and the Pfalz region beyond – a striking backdrop for a meal. The dress code is casual, and the team welcomes guests with a relaxed, personal approach. Vegetarian and vegan menus are available on request, and the kitchen accommodates allergies and intolerances with advance notice.
