For three years, the MARBURGER Esszimmer inside the Hotel Rosenpark brought a precise, passionate style of Contemporary and Modern French cuisine to Marburg an der Lahn. Under Küchenchef Denis Feix, the restaurant earned a Michelin star and a Michelin Green Star for its commitment to sustainability. The kitchen’s philosophy was clear: “We tell stories with our dishes – of nature, of the product, of origin and husbandry.” The Green House, a symbol of this approach, stood as the source of many ideas, with cooking that followed the rhythm of the seasons.
The restaurant is currently closed, taking a moment to thank its team and guests for three years of trust and shared evenings. “We look ahead,” the team writes. “A new gastronomic direction is emerging.” While the doors are closed, the anticipation for what comes next is palpable. The spirit of the kitchen lives on in events like the “Feix meets Tress” series, where Denis Feix collaborated with bio-pioneer Simon Tress, blending creative star cuisine with uncompromising sustainability.
At its core, the MARBURGER Esszimmer was about deep respect for ingredients. The food was driven by the seasons, with a clear focus on sustainability that earned the Green Star. The restaurant’s recognition is not limited to Michelin: it also holds 3 Gabeln, 4.5 Hauben, and was named among Top50 Köche and Top50 Sommelière. This commitment to both excellence and responsibility made it a standout in the region. Though currently on hold, the legacy of this kitchen – and the promise of a future reimagining – remains a compelling part of Marburg’s fine dining landscape.
