A Heart Like an Artichoke

The name Coeur D’Artichaut takes its cue from the French expression for someone who falls in love easily, again and again. True to that spirit, this Münster restaurant constantly reinvents itself while staying rooted in what matters: honest cooking, the best produce, and genuine hospitality. “Küche mit Herz, Seele und Haltung,” reads their motto – cooking with heart, soul, and conviction.

Chef Frédéric Morel

Born in Brittany, chef Frédéric Morel brings his French heritage to the heart of Westphalia. His cooking is a dialogue between Breton tradition and the seasonal bounty of his adopted home, with occasional nods to Creole spices. The result is a Modern French cuisine that feels personal and precise. The Michelin guide highlights “excellent cooking,” noting his outstanding sauces and stocks – a hallmark of his style.

Since April 2023, just three and a half years after opening, the restaurant has held two Michelin stars, making it one of only three two-starred restaurants in North Rhine-Westphalia.

The Dining Experience

The setting is “casual fine dining” – a warm, living-room-like space with just seven tables, all looking into the open kitchen. In summer, a leafy terrace offers outdoor seating, while a private room accommodates groups of up to ten. The monthly changing “Morel’s Tasting” menu comes in six or eight courses (a four-course option is available on certain days evenings). Every plate reflects the season and the region, with fermentation, ageing, and freshness balancing tradition and modernity.

Drinks with Character

Sommelier Katrin curates a wine list of around 450 labels, including a rare offering: Breton wine, exclusive to this restaurant in Germany. Guests can choose from a classic wine pairing, a highly praised alcohol-free accompaniment (rated among Germany’s best by the Gusto gourmet guide), or a prestige selection of exceptional vintages. The newly renovated bar area, completed in January 2026, now invites guests to enjoy the full menu in a relaxed setting or to drop in spontaneously for a glass and small bites.

A Philosophy of Openness

The kitchen works with fish, meat, seafood, nuts, and gluten – but nearly all dietary preferences can be accommodated with advance notice, except vegan (butter is non-negotiable). Children are welcome. The goal, as the team puts it, is to give guests “a memorable time” through a high-level menu, a relaxed atmosphere, and attentive service. It is that genuine, unpretentious warmth, paired with two-star craft, that makes Coeur D’Artichaut a destination in Münster.

Concept A casual fine dining restaurant with an open kitchen and a truly distinctive character. A monthly rotating menu offered in four (Wednesdays, Thursdays, and Sundays only, excluding public holidays), six, and eight courses. Culinary Style Breton roots, Westphalian ingredients, Creole spices, and a high degree of creativity: Frédéric Morel’s highly personal style refuses to be pigeonholed. An elegant fish course features cold-smoked sturgeon with Ossetra caviar, paired with a triple preparation of cauliflower and samphire. Paying homage to their adopted home is the Münsterland venison, matched with pan-seared porcini mushrooms and lingonberries. It is accompanied by a pumpernickel purée and, served separately, a praline crafted from braised venison shoulder. Wine Curated with meticulous care are the wine pairings – available as a prestige option as well – and their outstanding non-alcoholic alternative. Atmosphere The exceptionally warm service – with chefs even visiting tables – plays a major role in creating the relaxed atmosphere. Verdict Exceptional flavor experiences, both on the plate and in the glass.
