The story
Chef Stefan Stiller brought his signature concept to Guangzhou in 2021, reviving a name that defined Shanghai dining for six years beginning in 2008. At the Garden Hotel, Stiller strikes the same balance that made its predecessor beloved: rigorous standards meet approachable presentation, creating a space equally suited for a casual Tuesday night or an elegant Saturday date.
The menu reads like a European brasserie with a German accent and an Asian pantry. Starters range from a Bigeye Tuna with pink pomelo and tomato consommé to a Burgundy Snail with bone marrow and potato-leek mash. The Foie Gras Terrine with Sauternes jelly and green tomato chutney is a classic done right, while the Charcoal Grilled Octopus with aioli pimentón shows the kitchen's confidence with the grill.
Main courses lean into the lychee wood grill, where an Australian Rangers Valley Angus tenderloin or a bone-in rib-eye take center stage. A German-inspired section is a highlight, offering dishes like "Hackepeter" – beef tartare with marinated beef tongue and sauce remoulade – and "Kabeljau in Senf-Sauce," a confit black cod fillet with grain mustard sauce. The "Knusprige Schweins-Haxe," a crispy pork knuckle with sauerkraut, is pure comfort.
Pastry is not an afterthought. The Stiller Banana Split is a playful signature, while the "Schwarzwälder-Kirsch" brings dark chocolate, cherries, and cocoa gelato to the table. A lemon tart with pistachio and white wine sorbet offers a lighter finish.
The wine list is thoughtful, with a strong focus on German Riesling and Pinot Noir, plus a selection of grower Champagnes and Burgundies. Premium wines are served via Coravin, keeping the by-the-glass program interesting.
The restaurant earned a Michelin star for its high-quality cooking, a recognition that feels earned rather than chased. Stiller is a place where the food speaks clearly, the room is relaxed, and the evening unfolds at its own pace.
