The story
At Restaurant Spinne, located in the Haardt district of Neustadt an der Weinstraße, the kitchen is driven by a singular devotion to flavour. Chef Jörg Friedrich, described as a fou de cuisine, brings decades of experience from Michelin-starred kitchens to every plate. His cooking is rooted in the seasons, favouring regional products that sometimes cross into the neighbouring Alsace, or arrive from the coast of Brittany and the salt meadows of Limousin. The result is a style of seasonal dining that feels both grounded and inventive – a quality that has earned the restaurant a place in the Michelin guide.
Christiana Friedrich manages the front of house with warmth and an encyclopaedic memory for guests’ preferences. A certified wine ambassador, she curates pairings that complement the kitchen’s precise, ingredient-led approach. Together, the couple have run Spinne since 2010, first in Gimmeldingen and since 2016 from their current address on the Haardt.
The kitchen’s philosophy is clear: everything is made in-house – pasta, stocks, jus, terrines, ice creams. The winter menu illustrates this commitment, offering a choice of compositions built around a few core dishes. A meal might begin with seared scallops and a champagne-orange dressing, paired with salsify and avocado, or a duck liver terrine with sweet wine jelly and chutney. Among the main courses, veal cheek with Madeira sauce, artichokes and celery purée sits alongside wild-caught fish of the day and pigeon with elderberry jus, Brussels sprouts and pumpkin purée. Desserts are equally considered, from a Valrhona chocolate mousse with spiced oranges to a lemon slice with berries and basil sorbet.
The restaurant offers several set menus, including a winter selection and a longer tasting option that weaves together multiple courses. The cooking is precise, the flavours clear, and the pacing unhurried.
Spinne is a space for both intimate dinners and private celebrations. The restaurant can host events for groups of fifteen or more, often outside regular opening hours, with a champagne reception, finger food, and a multi-course menu. Guests can also stay overnight in the adjoining guesthouse. The atmosphere is relaxed and welcoming, with attentive but unobtrusive service. Whether you come alone, with family, or with business partners, the aim is the same: to offer a moment of genuine pleasure at the table.
