The story

Buchner Welchenberg 1658: Michelin-Starred Dining in Niederwinkling, Germany

Buchner Welchenberg 1658 in Niederwinkling

Since 1658, the Gutshof estate in Welchenberg has been a place of hospitality. In 1882, the property passed into the hands of the Buchner family, and today, the fourth generation runs this restaurant. Chef de Cuisine Mathias Achatz leads the kitchen, drawing on his experience at prestigious restaurants like Residenz Heinz Winkler and Cheval Blanc by Peter Knogl to create a menu that is both refined and grounded.

The cuisine here is a thoughtful blend of classic and modern techniques, with dishes that combine regional produce with global influences. Expect French foundations, with touches of Japanese and Bavarian inspiration. The menu changes with the seasons, highlighting ingredients from small local farms. A recent menu featured dishes like Scottish salmon with beetroot, wasabi, and buttermilk, alongside Kalbsbries with kale, peanut, and kimchi, and a main course of Schwarzwald chicken with ratatouille and sherry-thymian jus. The wine list is equally considered, with a strong selection to complement the food.

The restaurant itself is set within the historic farmhouse, offering a rustic yet refined atmosphere. There is also an outdoor seating area for warmer months. The commitment to quality has been recognized with a Michelin star, a distinction the team has held for a decade, celebrated with special anniversary menus for guests.

Buchner Welchenberg 1658 is a place where tradition and creativity meet, offering a genuine dining experience that feels both of its place and of its time.

Concept A personally managed establishment with an ambitious kitchen. Culinary Style Mathias Achatz prepares dishes with an international approach rooted in French cuisine. The majority of ingredients are sourced from local farms. Sea bream is served with radish, rice, and baked oyster, while venison loin comes with salsify, apple, and mustard jus. The cuisine is both down-to-earth and cosmopolitan, as seen in the sea bass with pumpkin, couscous, and curry beurre blanc. The flavor combination for the sorbet is also classic: cinnamon, plum, and vanilla. Wine A good selection featuring over 120 items. Atmosphere The history is palpable in the dining room, though it has been updated to contemporary standards. Ample wood accents, generously spaced tables, and friendly service create a pleasant ambiance. Concept A personally managed establishment with an ambitious kitchen.
