At Seesteg on the North Sea island of Norderney, the sound of the waves and the salt on the lips set the tone. The restaurant is part of a private brick hideaway that feels both stylish and unpretentious. It is a place where the landscape is the true luxury, and the kitchen matches that intensity with a clear, aromatic focus on the product.

The restaurant's modern cuisine, led by chef Markus Kebschull and his team, has earned a Michelin star and two Gault Millau toques. It is, as the team notes, the most exclusive restaurant on the island and the only one with such honours. The dining rooms are flooded with light, decorated in muted colours and a restrained, straight-lined elegance. Whether you are seated inside with views of the sea or on the terrace during a long summer evening, the atmosphere is exclusive yet relaxed.

The evening menu offers a choice of three to six courses, alongside a selection of à la carte dishes. A recent menu includes a sequence of precise, ingredient-driven plates: charcoal-grilled markele with Szechuan pepper and a foie gras ice, a lobster bisque with pineapple and cauliflower, and a scallop with beurre blanc and two kinds of caviar. A vegetarian menu runs parallel, featuring dishes like sauerkraut risotto with black truffle and a wild mushroom essence. The meal concludes with Valrhona Guanaja chocolate and Elstar apple, with a tonka bean anglaise and Calvados.

Open from midday until 22:00, the kitchen serves a small lunch menu until 13:30 and the evening carte from 18:30. The experience is described by the owners, Marc and Jens Brune, as one of "Sternstunden" – starry hours of a new kind of hospitality, at once reserved and attentive, with deeply personal service and understated luxury.

Concept In the urban-styled hotel along the beachfront promenade, Markus Kebschull serves refined cuisine at lunch and dinner – complete with a sea view. Cuisine Style The head chef and his team work with premium ingredients that are presented in a contemporary manner, incorporating regional produce whenever appropriate. For example, the autumn menu features a Frisian fallow deer essence with mushroom ravioli and root vegetables. The tender Norwegian scallop is paired with a caviar velouté, miso potato foam, and avocado – offering a delicate saltiness, a subtle umami touch, and buttery notes. Wine 120 selections and 20 bottles available by the glass. Ambiance Indoors, the space is bright and airy with abundant wood accents (walls, tables, chairs). In summer, the spacious terrace offers expansive views, plenty of room, and a relaxing atmosphere. Conclusion High-caliber internationally inspired cuisine in a relaxed setting.
