The story
At Entenstuben in Nürnberg, the evening is yours to shape. Guests decide at the table how many courses their meal will be, choosing from four to seven. The full seven-course menu is described as the complete culinary concert of the season, a tasting journey that changes with the calendar.
Chef and owner Fabian brings over twenty years of experience from top kitchens across Germany to his own small, elegant restaurant. The 30-seat space is deliberately intimate, set in a quiet location between Cramer-Klett-Park and Wöhrdersee. The atmosphere is relaxed and welcoming, with no dress code required.
The kitchen works exclusively with seasonal, regional produce. A recent winter menu shows the precision and creativity behind Entenstuben’s Modern Cuisine: eingelegte Rote Beete with Kefir and hazelnut, a Schaum von Feldsalat with Kohlrabi and fresh cheese, and karamellisierter Chicorée with Bulgur and Pomelo. Heartier dishes include geschmorter Lauch with potato and Beurre blanc, and a Terrine von der Steckrübe with pomegranate and celery cream. Each course offers an optional protein addition, such as smoked sturgeon, poached scallop, or braised beef cheek.
Wine is central to the experience. Fabian, whose childhood was shaped by Franconian wine culture and later refined by international experience, curates a list of rare, hard-to-find bottles. A premium wine pairing is available by the glass, alongside a house-made non-alcoholic accompaniment.
Entenstuben holds one Michelin star for high-quality cooking, a recognition that aligns with its commitment to precise, ingredient-driven Modern Cuisine. The restaurant also hosts special events, including a Primedine series that debuts new seasonal menus and themed dinners like the Champagne Experience Dinner.
