etz is more than a restaurant – it is a way of seeing the world. In Nuremberg’s Wiesentalstraße, the team has built a kitchen rooted in Wertschätzung: appreciation for ingredients, for the moment, for the land that feeds them. This is not a kitchen that follows trends; it follows the rhythm of Franconia’s meadows, forests, and ponds.

The restaurant earned its Michelin 2-Star rating for cooking that is precise, creative, and deeply connected to place. But the recognition is a natural outcome of a deeper commitment – to seasonality pushed beyond the usual four seasons. etz works with seven seasons, each one dictating what appears on the table. In late winter, the menu is titled Ruhe und Reifung – stillness and maturation – reflecting the frost and quiet of the season.

From Garden to Aroma Library

The kitchen draws from a landscape rich in heritage: centuries-old vegetable fields in Knoblauchsland, orchards with ancient apple varieties, fish from Franconian ponds, and vineyards that shape the region’s character. Chefs work with whole animals, ferment, age, and concentrate flavors. The result is a menu that changes weekly, sometimes more, always anchored in what is ripe and ready.

The omnivore menu might feature dry-aged catfish with propolis-whey butter and smoked chicory marmalade, or a slow-cooked Krainer stone sheep with fermented dill and carrot jus. The vegetarian menu, equally complete, transforms black radish, beetroot, and chicory into layered compositions. Both menus share a signature Brotzeit interlude: a 36-hour sourdough made from old wheat varieties and a ten-year-old starter from the restaurant’s own test kitchen.

Concept Regionally and seasonally focused casual fine dining in an intimate open-kitchen setting. An omnivore/vegetarian menu. Kitchen Style “Etz” stands for “captivating experience.” It’s not just about the food. Even the choreography of the kitchen brigade on the house’s “stage” is pure pleasure. It keeps the homage to Franconia’s culinary terroir consistently electrifying. The guiding principle of using only regional products for the (seven seasonal) menus implies aging, fermenting, marinating, and drying to refine and enrich their flavors, resulting in aromatically concentrated, fully seasoned culinary compositions. Franconian classics, such as crispy fried carp entrails, become a delightful taste surprise when cured in burnt leek oil and served in spirulina tamari (soy sauce). How the essence of the seasons is inspiredly translated onto the plate is shown by crispy chicken with hay butter and liver jus, perfumed with fermented elderflower and a cherry stuffed with pumpkin seed marzipan. Simply wonderful! Wine 1,000 selections with profound vintage depth. Franconian wines take center stage. Expert wine guidance.
