The story
Osteria del Centro in Nürnberg presents a dedicated Italian vegetarian cuisine under the direction of Chef Piero Roncoroni. He returned to his Ticino roots after years abroad to partner with his wife Mercedes. Their kitchen commits entirely to seasonal produce. A recent Gault&Millau recognition highlighted how they elevated the local dining scene through refined plant-based preparation.
The menu builds around precise vegetable transformations rather than heavy sauces. A cold infusion combines rhubarber, strawberries, and white asparagus skins to start the tasting journey. Main plates feature a carrot Wellington served alongside verjus foam and shiitake duxelles. Desserts continue the botanical theme with a pea cream brûlée paired to fresh strawberry sorbet.
The dining room accommodates exactly seven tables beside a small garden terrace. This compact layout fosters a relaxed atmosphere suited to slow Italian vegetable cooking. Guests pair their meals from a curated list featuring natural wines and orange varieties. The selection emphasizes independent producers who mirror the kitchen’s commitment to organic farming methods.
