Tisane: Modern Cuisine with a Michelin Star in Nuremberg

The Concept

Tisane – an extract, the essence of something. The name reflects the restaurant’s philosophy: reduced, focused, sincere. Sixteen seats line a single kitchen counter at Nuremberg’s most extraordinary Chef’s Table. There is no front of house, no back of house. Guests sit directly in the kitchen, watching every step of preparation, and the team works and talks with them throughout the evening. The atmosphere is relaxed, the dress code casual, the conversation easy. It is fine dining without white tablecloths, built on product and dialogue.

René Stein’s path to this kitchen began with a book – Dieter Müller’s “Geheimnisse aus meiner Drei-Sterne-Küche” – given to him during his second year of apprenticeship. It opened the door to the world of starred cooking. He trained with Juan Amador and Heiko Antoniewicz, who became mentors and friends. Time in the United States broadened his approach, teaching him a direct, easy-going hospitality. He earned his first Michelin star at the “Schwarzer Adler” in Franconia. His style is direct, clear, intuitive. “You can’t put my kitchen in five pigeonholes,” he says. “The keystones are the product and the sauce. That is the foundation.”

The Menu

The menu changes with the season; the current winter edition (March 2026) is titled “Für die Seele” – for the soul. Courses include kale, lentils, egg yolk, sturgeon, tepache, Duroc pork, and yuzu. Each dish is built around a central sauce, a nod to Escoffier’s dictum that sauces are the cornerstone of fine cooking. The tasting menu is 190 euros; the wine pairing is 95 euros, and a non-alcoholic pairing is available on advance notice. The wine list is deep, with a strong focus on Franconian and German growers, Burgundy, Champagne, and natural wines.

The Recognition

In 2025, Tisane was awarded one star by the Guide Michelin, alongside three Hauben from Gault & Millau, eight Pfannen from Gusto, and three forks from Feinschmecker. The Michelin star acknowledges the high quality of the cooking – a cuisine that is modern in technique but classical in its respect for sauce and ingredient. The restaurant’s impact is immediate: a simple, reduced modern cuisine that communicates directly, without pretense.

Concept Right in the action rather than just watching, in an extravagant interior with an open cooking laboratory. 1 menu, 8 courses. Culinary Style A minimalist stage for finely balanced plates that delight with their aroma through a consciously reduced palette. Lemon zest and an N-25 caviar "sea breeze" strip the cauliflower of any cabbage-like flavor at the outset and give a refreshing boost to the play of textures and temperatures between purée, couscous, sorbet, and fried cabbage leaves. The main courses are less artificial but cleverly accentuated. Wagyu and braised beef cheek, for instance, served with vinaigrette and anchovy emulsion on a crisp lettuce heart. A sweet running gag in the finale: an irresistibly rich and buttery yeast cake with an almond crust à la Bienenstich, accompanied by berries and vanilla cream. Wine 70 selections ranging from "light" to "complex". Natural/orange wines, sake selection. Atmosphere 16 front-row cooking seats surrounding a spectacular concrete U-shaped structure, delivering a high level of culinary pleasure. Conclusion A contemporary sensory experience of the highly interactive kind.
