Essence of Nature

At Veles, the guiding principle is nature itself. The kitchen team works directly with local farmers and producers, selecting ingredients at their peak to create dishes that are both honest and refined. This farm-to-table approach forms the backbone of a modern cuisine that lets each component speak clearly.

The dining room is intentionally relaxed. Guests watch the preparation of each course from their seats, gaining an intimate sense of the craftsmanship behind the plate. The atmosphere is unhurried, the focus squarely on the food.

The Menu

There is no à la carte. A single tasting menu changes with the seasons, offering five, six, or seven courses (145 €, 165 €, and 185 €). A recent winter iteration shows the kitchen’s affinity for root vegetables and counterpoint: carrot with sea buckthorn; turnip with apple and parsley; potato with kale; salsify with veal and onion; and a Jerusalem artichoke dessert with caramel. Trout with fennel appears between, and the meal closes with orange and coffee. A vegetarian menu is available on request. Wine pairings range from 70 € to 120 €.
