The restaurant, under the kitchen leadership of Chef Diana Burkel, has earned a Michelin Recommended distinction for its clear, focused approach to Modern Cuisine. The atmosphere is relaxed and unpretentious, furnished with dark natural wood that extends to a newly designed terrace for warm-weather dining.

Chef Burkel, a Franconian native who honed her skills at the Michelin-starred Essigbrätlein in Nürnberg and Castell in South Tyrol, describes cooking as “culture that brings people together.” Her philosophy is built on an “honest” kitchen: everything is handmade, sourced from the region, and free of additives. Spices, she says, are the “quintessence of everything,” giving each dish its character.

This ethos is reflected in a dual-concept menu. At lunch, the restaurant serves a weekly changing Mittagstisch of traditional Franconian dishes. In the evening, the focus shifts to a more refined à la carte menu, where seasonal ingredients like zander with kohlrabi and brown butter, or Kalb (veal) with parsley and miso, take center stage. A well-curated wine list, featuring regional Franconian bottles, complements the food, and the service team, led by Willi Penzenleitner, is known for spot-on recommendations.

Culinary Style Diana Burkel is just as much at home in front of the stove on Bavarian Broadcasting as she is in her own restaurant. While familiar dishes are cleverly elevated for viewers to try at home on television, the Würzhaus creations make delightfully innovative statements. Their aromatic profile is deliberately focused on a few key ingredients and, like the game with blood sausage and tarragon, are thoughtfully paired. They also love playing with textures and temperatures. Grilled venison, accompanied by a raw broccoli ragout with grape chutney and cream, hazelnuts, and confit garlic, is finished with a cooling cumin yogurt. Wine A meticulously selected cellar featuring predominantly spontaneously fermented wines, alongside exciting natural and orange wines.
