The story
Since 2011, the team at mundart Restaurant has been welcoming guests in Saulheim, in the heart of Rheinhessen. Their goal is simple: every visit should feel like a meal at good friends' house. The cuisine is Mediterranean, with clear French and German influences, and the wine list showcases the outstanding potential of local Rheinhessen winemakers.
The restaurant seats up to 45 guests indoors, and on pleasant days the sheltered courtyard terrace opens up, its heat-retaining paving stones making it comfortable even on cooler spring and summer nights. This attention to comfort and atmosphere is part of what earned mundart a Michelin Recommended distinction in 2026.
The menu changes with the seasons. Recent dishes include grilled octopus on tomato sugo with pointed cabbage, sous vide Allgäu beef fillet on creamed savoy cabbage with chanterelles, white halibut with kohlrabi and ravioli with Alba truffle, and Barbarie duck breast with mushrooms and pumpkin. Dessert selections feature a chocolate variation and café gourmand. Starters range from gratinated goat cheese with beetroot to Simmental beef tartare with horseradish and potato straws.
