The story

Dresch Oberaudorf: Tyrolean Regional Cooking and Family Hospitality

The Kitchen and Its Philosophy

Dresch in Oberaudorf places Tyrolean regional cooking at the center of its operation, guided by decades of the Anker family tradition. Karl Anker directs the kitchen using ingredients harvested from local meadows and cultivated gardens. This commitment to regional cuisine earned the establishment a Gault&Millau score of twelve points for 2026. Critics observed that the concise menu consistently delivers high standards without relying on heavy embellishment.

Dumplings and Stone Oven Breads

The Alpine kitchen rotates around seasonal harvests and time-honored preparation methods. Fresh dough bakes in a stone oven three evenings each week until the crust turns golden. The most frequently praised plate combines spinach dumplings, cheese dumplings, and Schlutzkrapfen tossed in brown butter and topped with shaved Parmesan. Visitors recognize this arrangement as a precise translation of local farming into everyday meals.

The Dining Room and Village Setting

Guests gather in a space designed to mirror the family’s emphasis on straightforward hospitality. The interior avoids ornate decoration in favor of durable materials and clear sightlines toward the courtyard. Evening service often follows afternoon walks through the Kaisergebirge foothills. The property sits adjacent to the village festival theater and hosts cultural programming throughout the summer season.

Fresh stone-oven pizza is served two days a week. This makes Dresch yet another pizza hotspot in the Unterland. They are, after all – just like in Brixlegg and Rattenberg – exceptionally good. But here, the focus is on what else is offered, and there is plenty. The menu is easy to navigate, and the quality of the dishes makes dining a real pleasure. Our "all-time favorite" is the Knödel-Tris: spinach dumplings, cheese dumplings, and Schlutzkrapfen, served with brown butter and generously topped with shaved Parmesan. You will hardly find anything better in Tyrol. But the rest of the menu is equally impressive.
