In the small wine village of Tiergarten, just below the vineyard slopes of Oberkirch, the Sklenar family runs a restaurant that blends Baden tradition with a clear Mediterranean soul. Chef de cuisine Martin Sklenar spent nearly three decades on the Balearic Islands, and that influence is woven into every dish.

The guiding principle here is straightforward: “Regionalität, Qualität und Frische sind für uns wichtig.” Seasonal ingredients from local producers form the base of a menu that changes almost daily. The chef writes his current offerings on a large blackboard in the dining room, a practical reflection of the kitchen’s commitment to cooking only with what is fresh.

The cuisine is Spanish at its core, but never dogmatic. Starters range from Gambas al ajillo prepared “Mallorca Art” to a Pulpo a la gallega carpaccio. The main courses include a Chateaubriand for two, slow-braised ox cheeks in Pinot Noir jus, and a vegetarian surprise menu. Desserts lean into the chef’s roots: the “Gató de almendras” is a Mallorcan almond cake served with almond ice cream, and the Bohemian Powidltascherl filled with plum jam is a house specialty.

The wine list draws heavily from the surrounding Baden wine region, with selections from local producers like Weingut Ullenburg, Waldulmer, and Oberkircher Winzer. A regional beer from the Bauhöfer family brewery, just four kilometres away, is also on offer.

The restaurant has been recommended by the Michelin Guide since March 2023, a recognition it has defended consistently. The setting is a converted winegrower’s house with a Weinberggarten – a vineyard garden – where guests can dine outdoors. Inside, the dining room seats up to 50 guests and is available for private events.

The team is young and led by Lucie Sklenar, who manages the front of house with a focus on individual, attentive service. The atmosphere is relaxed, the cooking precise, and the connection to both the Black Forest and the Mediterranean evident in every course.
