Every detail at IKO is intentional. The kitchen works with intuition, collective knowledge, and a deep respect for resources. They source from producers they feel connected to—a network of farmers, vintners, and artisans who share their values of care and quality. This modern cuisine is expressed through two tasting menus: the IKO Omnivore and a vegetarian option, both available in five or seven courses.

What’s on the plate

The meal begins with sourdough bread from a wood-fired oven, served with seaweed butter and smoked salt butter. The menus then unfold with dishes like Ikejime pike-perch from Badbergen with beetroot, black salsify, and buttermilk, or a garden course featuring chard, house-made tofu, and angry plum. A 1000° red mullet with beetroot barbacoa, pumpkin, and almond dashi follows, and the meal closes with a pear-vanilla taco with porcini ganache, quince, and pumpkin ice cream, plus a chocolate-buckwheat-lion with blackberry, chocolate, and caramel.

Atmosphere and craft

The restaurant’s name, IKO, hints at a broader vision. The team even throws their own plates in an on-site pottery studio, believing that a plate is more than a vessel—it is part of the story. They also distill their own Iko Gin, a blend of orange, bergamot, pine, ginger, and cinnamon. With outdoor seating available, the experience extends beyond the dining room. A vegetarian and an omnivorous menu are available. Culinary Style With care, enthusiasm, and dedication, the ambitious team works in the open kitchen to craft sophisticated modern dishes of excellent quality. It is best to begin with the ikejime pikeperch served with sake ice cream, or with the vibrant medley of yellow zucchini, tofu, chard, and Angry Apricot. "Timo's Saxon Peking Duck", served with creamy broccoli, mirabelle plums, and green beans, is always worth trying. Wine The selection is modest, and the friendly staff are always happy to advise and make recommendations.
