The story

freustil – Michelin-Starred Fine Dining in Ostseebad Binz

A New Definition of Relaxed Luxury

At freustil in Ostseebad Binz, Michelin-starred chef Ralf Haug and his team have created a restaurant that feels both elevated and effortlessly comfortable. Their philosophy? "Natürlich feine Kost" – natural, fine food delivered with a warm, unpretentious spirit. The Michelin inspectors recognised this balance of "entspannter Luxus" and grounded cooking, awarding a star that speaks to the precision and genuine hospitality found here.

What’s on the Plate

The kitchen works with simple, high-quality ingredients, drawing from the region and the season. Guests can choose between two tasting journeys: the freustil Menü at €128, a full programme of six courses, or the SurpriX Menü at €88, which distills the same menu into a more concise, surprising essence. Both are available in a vegetarian variant, reflecting the restaurant’s commitment to accommodating different palates without compromise.

The menus showcase dishes that are both playful and grounded – think paprika with algae and quark, fjord trout with cucumber and potato, or the indulgent "Nordic Tiramisu." The cooking is clean, confident, and rooted in flavour rather than fuss.

The Atmosphere

Freustil describes itself as a place of "relaxte Eleganz" – relaxed elegance. This extends from the dining room to the service, which is described as heartfelt and attentive. A deep bass of good music sets a modern yet comfortable tone. Reservations are strongly recommended, as the restaurant is consistently well-booked.

For those wanting to stay close, the freustil Hotel sits right next door, offering a seamless small getaway on the Baltic coast.
