The story
Restaurant Neunzehn in Otterndorf approaches modern German cuisine with disciplined techniques its owners learned across Europe. Jasmin trained as a cook in Hamburg before studying gastronomy management, while Max built his career starting in Vienna. They value regional ingredients yet look beyond the local horizon, combining their experiences at a five star hotel in Obergurgl and a Michelin starred restaurant on Sylt to launch the venue in June 2025. This formal training now guides every technique in the open kitchen.
The menu stays deliberately focused, reflecting a steady commitment to contemporary German plates. Salmon trout appears as a central protein, prepared with careful attention to texture and timing. A classic Wiener Schnitzel retains its crisp golden crust without heavy batter interference. Homemade cakes close the meal, while the Schlemmer Atlas awarded the kitchen one and a half ladles for maintaining this balanced approach.
Guests move between two distinct spaces depending on the weather. The main dining room uses selective wood paneling to warm the interior of the original 1883 hotel structure. A concealed courtyard sits directly behind the entrance, providing an outdoor extension for warmer months. Wooden tables face inward, which keeps conversations grounded and reduces street noise.
