The story
Borst is very much a family operation. Chef Harry Borst leads the kitchen alongside his son Max Borst as Junior Chef, with Monika Borst overseeing the front of house and Oma Hannelore Borst adding a generational touch. Together they run both the restaurant and adjoining hotel in the quiet town of Maßweiler, near Pirmasens. The atmosphere is warm and personal — a place where hospitality feels natural, not rehearsed.
The kitchen focuses on Classic French cuisine, prepared with precision and a respect for quality ingredients. Menus change with the seasons, reflecting what is best at the moment — a farm-to-table approach that the Borst family clearly values. Dining is offered for dinner from Wednesday onward, and on Thursday through Sunday also for lunch. The terrace provides outdoor seating for warmer months. (Note that the kitchen cannot accommodate vegetarian or vegan requests, and pets are not allowed.)
Since 2023, Borst has held a Michelin star — a mark of high-quality cooking that the family wears with understated pride. The 2026 Michelin guide continues that recognition. Additionally, the German travel magazine Der Feinschmecker named Borst among just twelve hotels in the country with an excellent breakfast. For a restaurant that values the best from the morning onward, that says a great deal about their commitment to every meal.
