Chef and Philosophy

Chef Vjekoslav Pavic brings decades of experience in top gastronomy to Die Brasserie. After training at Parkhotel Bremen, Restaurant Jörg Müller, and the three-star Residenz Heinz Winkler (where he served as sous chef), Pavic earned his first Michelin star in 2010. In 2014, he opened Die Brasserie in Pirmasens, and the restaurant has been awarded a Michelin star every year since 2016. He works alongside host Lena Pavic, restaurant manager Edin Malicbegovic, and chef de cuisine Sandor Kalman.

The Kitchen’s Approach

The cuisine combines classic techniques with contemporary sensibilities, always following the rhythm of the seasons. The team prioritizes quality: regional vegetables, sustainable fish, and meat from humane husbandry. No pre-processed ingredients are used. Dishes highlight natural flavors—from simple salt and herbs to elevated ingredients like poached scallops or Breton turbot. Presentation is understated; the team believes good food needs no gimmicks.
