Chef Maximilian Schmidt leads the kitchen, crafting a style of modern cuisine that brings together regional ingredients, Nordic techniques, and Asian flavors. The result is a series of 3-, 5-, or 8-course menus that change with the seasons, each one a careful composition of taste and texture. Vegetarian options are always available, and a vegan menu can be prepared on pre-order.
The dinner menu begins with a sequence of snacks—Meringue, Croustade, Romana, Taco, and Bisque—before moving into dishes like Salmon trout with radish and ginger, or pig tails from Altdorf with sorrel and sauerkraut. A Chawanmushi of eel and fennel follows, then Bavarian prawns with Granny Smith and lime, and cod with fermented mushroom tea and morel. The meal closes with beef, curry and sauce vierge, and a playful Champagne and cherry course. For those who prefer a vegetable-focused evening, the veggie menu offers its own arc of flavors, including a koji celery main and a schupfnudel dessert.
Signature additions—such as onion velouté, Arctic char with fermented asparagus beurre monté, or calf sweets “Korean style” with gochujang and cinnamon—allow guests to expand or replace courses. A chateaubriand for two, a classic since 1950, is also available.
Sustainability is not a trend here but a daily practice. The kitchen works closely with regional producers like Boierhof, Sabine Hauner, and Oberpfalz Beef. Herbs, blossoms, and vegetables come from their own cultivation, and even the koji starters, garums, and shrubs are made by hand. This commitment to uncompromising quality is what earned the restaurant its Michelin star, a recognition that speaks to the precision and care in every plate.
