The story

HEIMAT Restaurant at Gut Steinbach – Reit im Winkl | Michelin-Recommended International Cuisine

HEIMAT – Where Regional Roots Meet Refined International Cuisine

Perched on a sunny plateau in the Bavarian Alps, Gut Steinbach is a Relais & Châteaux property that feels like a genuine retreat. Within this hotel, the restaurant HEIMAT is the culinary heart, led by chef Achim Hack. The name itself—Heimat, meaning home—points to the kitchen’s philosophy: cooking that is rooted in place, honest, and deeply connected to the surrounding landscape.

The cooking here is International in its outlook, but the soul is distinctly local. Approximately 80 percent of the ingredients come from within a 100-kilometer radius of Reit im Winkl. Chef Hack and his team work with regional producers, turning seasonal produce into dishes that are both refined and direct. The approach is resourceful, too: the kitchen follows a nose-to-tail, root-to-stem ethos, aiming to use every part of an ingredient.

This commitment to sustainability has earned the restaurant a Michelin Green Star, alongside its Michelin Recommended status. The recognition is not an afterthought—it is woven into the daily practice of sourcing, cooking, and serving. The result is a menu that changes with the seasons, offering dishes that taste of the Chiemgau region while remaining unmistakably International in technique and presentation.

The setting is as warm as the cooking. Guests dine in a series of wood-paneled stuben (parlors), where the crackle of a fire and the clarity of mountain air set the mood. It is a place to slow down, to share a meal with family or friends, and to experience a cuisine that is both sophisticated and grounded.

Concept Regional, sustainable cuisine served in three dining rooms at the Relais & Châteaux Hotel Gut Steinbach. À la carte menu and two set menus, "Heimat" and "Boden" (vegetarian), featuring 3–4 courses. Culinary Style Achim Hack's cooking is deeply rooted in Bavarian tradition – 80 percent of the ingredients come from within a maximum distance of 80 kilometers. This includes classics such as beef broth, Leberkäse, and mushrooms in herb cream sauce served with dumplings. Culinary excursions include pumpkin orecchiette with tomatoes and Parmesan, or zander fillet with chickpea curry. Top-quality cheese is supplied by the Tölzer Käseladen. Wine Around 100 wine selections, with 15 available by the glass. Atmosphere The "Auerhahn Rooms" feature a tiled stove and the ambiance of a mountain hunting lodge, the "Bayern Rooms" boast lighter wood, abundant natural light, and wooden paneling, while the "Tiroler Rooms" have slightly darker wood and carvings, softened by light-colored fabrics – all inviting and stylish. Verdict Achim Hack brings the Chiemgau region to your plate in the finest style.
