The story

Hirsch – Michelin-Starred Classic Cuisine in Sonnenbühl, Reutlingen

A Kitchen Rooted in the Region

On the Swabian Alb, the Romantik Hotel Hirsch in Sonnenbühl-Erpfingen is home to a restaurant that has quietly earned its place among Germany’s finest. Chef Gerd Windhösel leads the kitchen with a philosophy that prizes quality and taste over spectacle. “Genuss und Gesundheit” (pleasure and health) are his guiding principles, and they show in every dish. His cuisine is deeply regional – a classic cuisine shaped by the landscape around him. Alb lamb, Alb Wagyu, water buffalo from the region, and organic vegetables from local growers are the foundation. Nothing flashy, just honest, excellent ingredients transformed with skill.

Two Dining Experiences

Hirsch offers two distinct settings. The Restaurant Hirsch is the fine-dining room, elegant and focused, where the tasting menus unfold. For a more relaxed evening, the Dorfstube serves the same regional philosophy in a cozy, rustic atmosphere. Both spaces reflect the same commitment: straightforward, high-quality cooking that lets the Swabian Alb speak.

Recognition That Speaks for Itself

The Michelin guide has awarded Hirsch one star continuously since 1994, a rare testament to consistency and dedication. The award describes “high quality cooking,” and the restaurant’s own description – “geradlinig, regional, hochwertig” (straightforward, regional, high-quality) – matches the experience precisely. The Feinschmecker magazine once named it the best regional cuisine in Baden-Württemberg. But the real story is on the plate: produce-driven, seasonal, and never fussy.

Concept In this traditional hotel on the Swabian Alb, high-quality regional cuisine is served. Three menus (regional, vegetarian, and gourmet). Second restaurant "Dorfstube". Culinary Style For years, Gerd Windhösel has consistently celebrated the region in his menus at an exceptionally high standard, for instance with Seckach trout from hot spice smoke, accompanied by pumpkin, einkorn, and kernel oil. Duroc pork loin is grilled over charcoal and served with a strong beer sauce, colorful beetroot, and triple potatoes. A refined finale features a jelly made from local damson plums, served with almond foam, black walnut, and vervain cream ice. Wine The wine list focuses primarily on Württemberg and Baden, featuring around 150 selections. Atmosphere An elegant country house style with fresh colors and fabrics, perfectly complementing the tables dressed in white linen. Conclusion Successful fine dining in a charming romantic hotel on the Alb.
