The story
At Gourmet-Restaurant Reuter in Rheda-Wiedenbrück, chef Iris Bettinger and her team have been earning a Michelin star for twelve consecutive years. The restaurant’s Modern French cuisine is rooted in classic techniques, but Bettinger’s style defies easy labels. She calls it “interregiomediterraneurasisch” – a playful mashup of international, regional, Mediterranean, European and Asian influences. The result is a kitchen that feels both grounded and adventurous.
Bettinger runs the kitchen with her daughter, a rare mother-daughter duo in German fine dining. Together, they source almost exclusively organic meat from farms they know personally, and buy fruit and vegetables twice a week from the Rheda weekly market, always in season. This commitment to regional producers – many within three to four kilometres – gives the cooking a strong sense of place, even as it reaches beyond.
The menu changes with the seasons, but certain signatures recur: a Westphalian “Töttchen” ragout reimagined as a crisp praline on pickled radish and nettle broth; a fillet of turbot; a deboned quail stuffed with carrot pickert, dates and a coffee-curry jus. These dishes show how Bettinger marries traditional French foundations with local ingredients and a touch of global spice. The wine list is equally thoughtful, featuring small producers and classics like Laurent Perrier and Pommery.
The dining room seats just sixteen guests, with an elegant interior that favours calm and detail over show. In fine weather, the summer terrace opens for al fresco meals. Reservations are required – the team asks that you book by noon on the day you wish to dine. The restaurant is closed on Mondays, Tuesdays and Sundays, and on public holidays.
Iris Bettinger is one of Germany’s few female Michelin-starred chefs, and her kitchen culture emphasises fair schedules and quality of life for her team.
