The story
Overlooking the Baltic Sea from the Strandhotel Dünenmeer in Dierhagen, the Ostseelounge offers a refined dining experience that has earned a Michelin recommendation. The restaurant’s clean, minimalist design lets the coastal panorama take centre stage, while air conditioning ensures comfort year-round. On warmer evenings, outdoor seating on the Dünenterrasse extends the experience into the fresh sea air.
Kitchen chef Christopher Huhnstock-Kerber leads the kitchen with a focus on modern cuisine rooted in regional ingredients. He draws heavily from the Baltic coast’s larder – fish, shellfish, and seasonal produce – while also looking beyond Germany’s borders for exceptional products. The result is a style described as “purist, regional, and powerful,” where each element retains its natural character. The chef maintains close relationships with local suppliers to guarantee consistency at this level.
Guests choose from three-, five-, or seven-course menus, each built around the season’s finest offerings. The kitchen’s seasonal approach means the menu evolves regularly, highlighting whatever is at its peak. Every course can be paired with wines selected by the in-house sommelier, Bettina Huhnstock-Kerber, who works alongside her husband to create harmonious pairings.
The atmosphere is elegant and calm, with an adults-only policy that ensures an uninterrupted evening. The open kitchen events (held on select dates) allow diners to watch the team at work, adding a layer of theatre to the meal.
The Michelin recommendation underscores the precision and creativity of the cooking here. It is a quiet, confident endorsement of a restaurant that lets the ingredients speak, the sea set the mood, and the craft of the kitchen do the talking.
