In the quiet seaside town of Ostseebad Wustrow, Schimmel's combines a cozy pension with a restaurant that celebrates regional country cooking. The house philosophy is summed up in a quote by Wilhelm Busch that adorns their website: “Dies für den und das für jenen. Viele Tische sind gedeckt... Lasse jedem seine Freuden.” It speaks to a generous, unhurried hospitality. Guests find themselves in a setting of comfortable dining rooms and a sunny outdoor seating area – a place where homemade cakes and carefully selected wines complete the experience.
The kitchen follows the rhythms of the season, presenting two daily menus that change regularly. Recent examples show the range: a starter of Kartoffel-Thymian-Krapfen with cheese fondue and red chicory, a creamy barley risotto with beetroot and horseradish, or a classic Kalbsleber with apple-quince compote. Main courses might feature Skrei with curry-fennel and mussels, or dry-aged roastbeef with Café de Paris sauce.
