A Michelin Star without the Stiffness

In the medieval heart of Rothenburg ob der Tauber, Villa Mittermeier’s restaurant proves that a Michelin star need not come with starched formality. “Casual fine dining” is the guiding idea here: high-level Modern Cuisine served in an atmosphere free of pretence. The restaurant earned its star (and a Michelin Key) by prioritising genuine flavour and warmth over silver cloches and white gloves.

From Family Business to Star Kitchen

Christian Mittermeier and his wife Ulli took over the hotel from his parents in 1995 and have steadily shaped it into the Villa Mittermeier of today. Christian, a member of the Jeunes Restaurateurs d’Europe, brings decades of experience – from his apprenticeship in the Black Forest to cooking for international audiences. In the kitchen, he works alongside chef Thorsten Hauk, whose career has spanned stages around the world. Together, they build menus that highlight regional ingredients with clarity and precision.

What’s on the Plate

The cooking is grounded in top-quality produce, much of it sourced from the restaurant’s own ecological vineyards and beehives. A sample menu might begin with Amur carp with kombucha, dill, and celery, then move to rehydrated carrot with radish and coriander. Spring morels with peas and sherry, wild prawn with cauliflower and yuzu, and sablefish with celery and sweetbreads follow. Pasta with Via Aurelia hard cheese and Périgord truffle leads into Poltinger lamb with purple potatoes and marjoram, then pigeon with Hokkaido pumpkin and black garlic. Dessert brings Neusiedler quince with Elstar apple and shio koji.

Guests can choose between five-, seven-, or nine-course menus (135 to 185 euros), each accompanied by a wine pairing from the house’s “Tauberhase” label – wines grown without synthetic sprays in the family’s own vineyards. A non-alcoholic “Drink & Drive” option is also available.

A Philosophy of Openness

The Mittermeier team is explicit about their values: they welcome everyone regardless of background and actively oppose discrimination. The restaurant has been a place of integration since its founding in 1963. That same spirit extends to the kitchen’s approach – respectful of ingredients, of the land, and of the people at the table.
