In a listed 1890s townhouse at the edge of Saarbrücken’s Nauwieser Viertel, the Esplanade brings together a boutique hotel and a two-Michelin-starred restaurant. The interior, designed by Tanja Zimmer, follows mid-century principles: clean lines, reduced forms, and carefully chosen materials. Hand-picked design classics and custom ceramic tiles in forest and sea tones create a calm, coherent space.

The restaurant’s kitchen is led by chef Silio Del Fabro, who the Michelin inspectors describe as an “echtes Talent” – a real talent. His cooking is a modern interpretation of classic cuisine, drawing on French, Mediterranean, and Japanese influences while staying rooted in regional produce. The restaurant sources fruit and vegetables daily from a Demeter-certified biodynamic cooperative in which it holds shares, and herbs come from a nearby city farm. The kitchen’s own beehive supplies honey for breakfast.

Del Fabro’s style, which he calls “Moderne Klassik,” aims for clarity and precision. Dishes such as crispy-skinned char with three kinds of mussels, or perfectly poached veal fillet with truffle jus, are described as both full-bodied and lean. The Michelin guide notes that his food is “clearly structured, refined, and wonderfully balanced.” Guests can choose à la carte, from a tasting menu of six to nine courses, or from the weekly Plat du Jour offered at lunch from Wednesday to Saturday.

The restaurant earned its first Michelin star in 2018, and the second followed in 2021. That recognition marked the Esplanade’s evolution from a modern French restaurant into a destination for serious classic cuisine, supported by a wine list from the house’s own vaulted cellar.

Culinary Style Silio Del Fabro is a master of bold flavors, bringing classic aromas into an entirely new light. He serves vichyssoise in a contemporary way as an airy mousse, resting it on a rich oxtail coulis and garnishing it with caviar, potato cubes, and chive oil – visually stunning! He cooks Royal langoustines to perfection, served alongside a cucumber stuffed with tomato jelly and tatar, accompanied by a fruity tomato nage. Del Fabro's sauces are equally masterful, such as an aromatic port wine jus served with a crépinette made from Imperial quail, paired with curly kale, a savoy cabbage cannolo, and wild mushroom stuffing. Wine An excellent wine list and expert sommelier guidance; with a focus on German and Burgundian wines. Ambiance Stylish yet relaxed in a modern bistro style; features an aperitif terrace in the summer. Very friendly service.
