The story

GästeHaus Klaus Erfort – Saarbrücken | Michelin-Starred Classic French

GästeHaus Klaus Erfort in Saarbrücken

On the outside, classicism meets clean modernity. Inside, the GästeHaus Klaus Erfort offers a space of soothing elegance – the perfect backdrop for a meal that aims to leave a lasting impression. This is the domain of chef Klaus Erfort, whose kitchen is guided by a simple conviction: “The truth lies on the plate.”

Klaus Erfort’s path to the stove began with a school internship in a small Saarland restaurant. The organisation and precision of a professional kitchen captivated him, and he discovered that cooking could directly influence a guest’s mood. Today, he brings that same dedication to his own restaurant, which has been operating independently since 2003 – without a hotel or investor. His cooking is classic French in spirit, balancing tradition with modern sensibility. It is a style that earned him three Michelin stars for years; the restaurant currently holds two stars, a testament to its consistent excellence.

The menu reflects this philosophy. The multi-course Menu Dégustation (from €175 to €244) showcases the kitchen’s craftsmanship: dishes like grilled scallop with Imperial caviar and beurre blanc, or Loup de Mer with date tomato and artichoke. For those who prefer to choose, the “Les grands Classiques” section offers classics on request, such as Bresse chicken with truffle or a Wagyu beef ramen with grilled aromas. A cheese selection from Maître Antony and desserts like strawberry with Valrhona Jivara chocolate round out the experience.

The wine list is noteworthy, with carefully chosen pairings available for each menu. The restaurant also offers outdoor seating in warmer months, and the premises are wheelchair accessible.

At GästeHaus Klaus Erfort, the focus is on honest technique and the finest ingredients. The result is pure enjoyment – a meal that stays with you.

Concept Large, French-inspired gourmet cuisine. A tasting menu (4–7 courses); house classics à la carte (upon request). Culinary Style Klaus Erfort has successfully restructured his business; he is cooking with inspiration and at the peak of his form. Classic technique and the finest seasonal ingredients define his style, as exemplified by the Breton lobster duet: seared on glazed leeks, complemented by chanterelles and beurre blanc. Served alongside is a lobster salad with sesame vinaigrette, fresh herbs, and coriander oil. Turbot is rarely cooked to such perfect texture; Erfort serves it atop white asparagus tips with imperial caviar, truffle jus, and peas briefly smoked over charcoal. For the main course, Miéral pigeon roasted in a salt crust: exceptionally tender, accompanied by classic pigeon jus, celery purée, and, in season, fresh morels simmered in their own broth. Wine Impressive wine list (around 600 selections), with a focus on Germany and France. Atmosphere Spacious, light-filled rooms, crisp white table settings, and polished parquet flooring create an immediate sense of comfort. A large summer terrace; Pascal Morsch provides charming service. Verdict Grand cuisine in a stylish yet relaxed setting.
