The story
In Sankt Ingbert, a former brewery dating back to 1877 has been transformed into a refined dining destination. Die Alte Brauerei is a family-run restaurant where the stone walls hold a century of stories, and the kitchen writes a new one every day. The atmosphere is warm and unhurried, a place that feels both grand and genuinely welcoming.
The kitchen is led by Chef Florian Dauphin, who took the reins in September 2023 after training in several Michelin-starred houses. His cooking is rooted in a deep respect for the product. He works with a philosophy of sustainability and common sense, favouring fish caught under good conditions and vegetables that reflect the season. His cuisine is European Contemporary with a strong French foundation, often influenced by Belgian and Nordic traditions. He uses fermentation and delicate techniques to build flavour, always aiming for elegance and lightness on the plate. Fish is his preferred medium: noble, delicate, and demanding of precision.
Menus change with the seasons. The Lunch menu offers a refined pause, while the Découverte and Signature menus take you deeper into the chef’s sensibility. A vegetarian menu is available on request. Dishes like the candied salsify with miso jus and truffle, or the fish of the day with yuzu beurre blanc, show a kitchen that balances technical skill with clear, honest flavours. The team, led by Lorena-Jil Dauphin, provides attentive and friendly service in a space that also includes a private dining room, L’Orangerie, for special events. Die Alte Brauerei has earned a Michelin Recommended distinction for its consistent, thoughtful cooking – a recognition that fits naturally with the Dauphin family’s commitment to excellence.
