The story
In Sankt Ingbert, chef Peter Wirbel gives the Bliesgau a culinary face. At midi, the philosophy is rooted in the region: up to 80 percent of the ingredients come from the local biosphere reserve. This commitment to regional produce is not a trend but a conviction, forming the foundation for cooking that is both ambitious and grounded. The menu features seasonal originals—candidates like lentils, beetroot, or parsnips take the spotlight, treated with respect and creativity.
Wirbel’s path to his own kitchen is marked by experience. After training, he worked alongside Jens Jakob at the Michelin-starred Le Noir and JJ – Das Restaurant. He later co-founded Le Comptoir before taking the reins at midi in April 2022. Within two years, he and his young team earned the restaurant its first Michelin star in 2024, a recognition that confirms their path of honoring local roots while reaching for the stars.
The cuisine at midi is a liaison between the diversity of Saarland cooking and the craft of French haute cuisine. The menu changes with the seasons. Guests can choose from a multi-course menu, selecting between 4, 5, 6, or 7 courses. Highlights from a recent menu include beetroot with truffle, pumpkin tortellini with fresh goat cheese, smoked cod with Roquefort and leek, and a duo of Longhorn beef with red cabbage and parsnip. On Tuesdays and Wednesdays, a special 8-course surprise amuse-bouche menu invites guests on a culinary journey. The atmosphere is relaxed and welcoming—a place where the soul of the region is experienced in every bite.
