Just outside Schwäbisch Hall, in the quiet hamlet of Veinau, the Kunz family runs Landhaus Zum Rössle – a place where hospitality, sustainability and regional tradition meet. The restaurant, part of a larger estate with event spaces and guest rooms, has earned a Michelin Bib Gourmand for its consistent, value-conscious cooking, and its kitchen is guided by the principles of Slow Food.

Chef Ernst Kurz Jr.

The man behind the stove is chef Ernst Kurz Jr., whose career spans twelve years in leading gourmet restaurants – including the Adler in Fläsch (Switzerland), Kastelle Burg Wernberg, and even the legendary Sea Cloud sailing ship. Back in his home region, he now interprets classic Swabian dishes with a modern, worldly touch. The result is food that feels both deeply rooted and refreshingly inventive: local ingredients, seasonal produce, and clear, honest flavours.

Philosophy and Sourcing

The Rössle kitchen relies on a close network of regional producers: from the bäuerliche Erzeugergemeinschaft in Wolpertshausen to the Löwenbrauerei in Hall, and from the Hof Engelhardt to the Kartoffelhof Link near Lauffen. Wild comes from the family’s own hunting grounds. The menu changes with the seasons, and the kitchen’s commitment to sustainability is not a marketing phrase but a lived practice – for the sake of people, animals and the environment.

The Dining Room

The gasthaus itself strikes a balance between tradition and contemporary comfort. Warm, inviting spaces, a cosy Stammtisch, and a bright winter garden offer different moods for different occasions. A thoughtful wine list complements the meal. Outside, the Sommergarten extends the dining experience into the warmer months, surrounded by greenery and the calm of the Hohenlohe countryside.
