Since November 2014, Gourmetrestaurant Aubergine has held a Michelin star—the only one in the StarnbergAmmersee region. Set within the Hotel Vier Jahreszeiten Starnberg, the restaurant offers international cuisine that begins not with a dish, but with a hero ingredient. “It must have a hero—we define it by season and inspiration,” says Chef Maximilian Moser. From that centerpiece, the entire menu unfolds into a coherent, often surprising composition of flavors.
Moser credits his team for the restaurant’s consistent quality. “Only when everyone brings in their creative ideas, their craftsmanship, and their full passion does the interplay of the kitchen team culminate in a taste experience for the guest,” he notes. The kitchen works with the freedom and trust granted by the owning family, allowing for a kitchen that is both disciplined and imaginative. The result is a menu that changes with the seasons, always built around a fresh protagonist.
Aubergine describes its atmosphere as “entspannter Atmosphäre”—relaxed and welcoming. The restaurant is open Wednesday through Saturday from 18:30 to 22:00. Beyond à la carte, guests can book private dining for celebrations or corporate events, with the experienced team handling every detail from decoration to guest accommodation at the hotel. Cooking classes with Chef Moser are also offered, giving a deeper look into the techniques behind the Michelin-starred kitchen.
