The story
In the historic centre of Stuttgart-Degerloch, Fässle le Restaurant has been a place of hospitality for over a century. Built around 1900, the timber-framed building has always been a gastronomic hub, first as a local inn where Stuttgarters would escape the city for fresh air, and later as a celebrated address under the Maier family in the 1970s and 80s. Today, chef-patron Patrick Giboin continues that legacy with a refined Classic French cuisine that has earned the restaurant a Michelin Recommended award for 2026.
Chef Giboin’s cooking is rooted in his French origins and a deep respect for traditional haute cuisine, yet open to modern international influences. Every dish begins with an idea, often sparked by the seasonal bounty of Stuttgart’s weekly markets. He insists on the finest ingredients, letting them speak fully while blending into elegant compositions. Delicate spices and fresh herbs provide the finishing touch. The result is food that aims to please both palate and eye.
The restaurant itself is a characterful space, with three dining rooms seating up to 70 guests. The main restaurant features a historic wooden bench that runs along the wall, allowing tables to be arranged for intimate dinners or lively gatherings. The Salon Toulouse-Lautrec offers a cosy setting for private parties, while the Blue Salon, added in 2000, provides an elegant backdrop for celebrations of up to 30 guests. In warmer months, the terrace offers a relaxed spot to dine outdoors.
The team is led by maître Pascal Foechterlé, a seasoned host whose career includes the Schwarzwaldstube and Vendôme. Together with Claudia Johnson as sommelier, they ensure the service matches the kitchen’s ambition. The wine list, carefully selected from local and international producers, completes the experience.
With its blend of history, atmosphere and a kitchen that honours both tradition and seasonality, Fässle le Restaurant remains a destination for Classic French dining in Stuttgart.
