Culinary Style No other chef in the region places as strong an emphasis on blending local produce with Japanese inspirations as Jörg Scherle (who is also a renowned koi carp breeder). This approach is beautifully illustrated by dishes such as Black Forest stream trout with Amanatsu citrus, Koshihikari rice, and umami beurre blanc. The Challans duck breast is refined with beetroot, Japanese mountain pepper, kumquats, and shoyu. Even the cheese course featuring Roquefort and hay-milk cheese served with Charentais melon and fruit bread achieves this distinctive twist through a shiso sorbet. Wine The exceptional wine list features 1,500 selections, highlighting not only renowned international classics at their peak drinking age but also premier German wines with remarkable vintage depth, all meticulously stored in the cellar vault.
