In the small town of Staufen im Breisgau, the family-run Ambiente has been a quiet constant for 25 years. Owners Melanie and Mathias Luiz greet guests in a light-flooded dining room where understated design and careful details set the tone. The space is air-conditioned in summer, comfortable year-round.
Chef Mathias Luiz’s cooking mirrors the restaurant’s aesthetic: straightforward, true to the ingredients, and deeply seasonal. For a quarter-century, his kitchen has relied on the quality of first-rate produce, letting natural flavours speak. The result is what the team calls “unaufgeregten Wohlgeschmack” – unpretentious, pure taste. The menu changes with the seasons and is kept deliberately simple, a reflection of the philosophy that ordinary things, done with conviction, hold extraordinary value.
This approach has earned Ambiente a Michelin Recommended distinction for 2026, as well as mentions in Falstaff, Gusto, Henris, Schlemmer Atlas, and Varta. It’s a place for those who value substance over spectacle: a farm-to-table ethos without the marketing, vegetarian-friendly options, and a calm atmosphere that invites lingering.
Ambiente is open Friday and Saturday from 18:00, and on other days for lunch and dinner – closed Wednesday and Thursday. Reservations are recommended, especially for groups of six or more, where a fixed menu may be arranged. On public holidays, only menus are served. Parking is available, and outdoor seating lets guests enjoy the Black Forest air in warmer months.
