The story
The Adler Stuben is the restaurant of the Parkhotel Adler in Hinterzarten, an estate whose foundations were laid more than 575 years ago. The building that now houses the dining rooms dates from 1639, built as a traditional Schwarzwaldhaus dedicated to culinary hospitality. Today, after extensive renovations, the restaurant balances modern elegance with authentic Black Forest character. Ninety percent of the interiors have been updated, leaving a harmonious mix of contemporary style and carefully preserved traditional touches.
The culinary direction is guided by Küchendirektor Bernhard König, a trained chef and certified spice sommelier who has been at the hotel since 2008. Working alongside him is Küchenchef Alexander Kolodziej, who brings creativity and experience from international top hotels. Together, they oversee a team that prepares each dish with care – sauces, for example, are made according to classic gourmet techniques, with a veal jus requiring twelve hours of preparation.
The kitchen’s philosophy is straightforward: cook with sustainably produced ingredients from the surrounding area whenever possible. Herbs come from the hotel’s own garden beds. Game is sourced from hunters in the Naturpark Südschwarzwald. For certain international dishes or seasonal specialties, the team selects exceptional products from further afield. This approach yields what the restaurant calls “badisches und Internationales in ganz eigener Interpretation” – creative regional specialties with French, Mediterranean, or Asian influences.
The cuisine is squarely in the European and country cooking tradition, with an emphasis on hearty, flavourful dishes that reflect the seasons. The evening menu, part of the hotel’s "Genuss-Pension," offers a choice of three different four-course menus or the option to compose your own from the à la carte selection. Vegetarian guests are particularly well catered for, with dishes built around what the garden provides.
The restaurant’s consistent quality earned it a Michelin Recommended award for 2026. The dining room – the Adler Stuben – is open daily to both hotel guests and external visitors by reservation. The atmosphere is welcoming and unhurried, with a service team led by Restaurant- und Bankettleiterin Sarah Frank, who combines professionalism with natural warmth. A lobby bar extends the evening for drinks in a stylish setting.
Beyond the table, the Parkhotel Adler sits on a 70,000-square-metre property at the edge of Hinterzarten, a healing climate resort. The setting is quiet, surrounded by forest and nature – a place where the focus is firmly on enjoyment and regeneration.
