At the edge of the Schluchsee, where the Black Forest meets water, the Auerhahn has stood for centuries. Built in 1774 as a traditional Schwarzwaldhof, it burned down twice and was rebuilt each time. Today, it is once again family-owned, run by Marius Tröndle, a descendant of the original builder. The hotel and its restaurant are the result of generations of care — a place that describes itself as “between origin and progress, relaxed stubbornness and first-class cuisine.”

The restaurant Auerhahn is the heart of the house. Its kitchen follows the seasons and works with international influences, drawing on the bounty of the region and the lake. The dining experience is built around a Fine Dining menu, served in a setting that blends the warmth of the original farmhouse with clean, contemporary lines. The Michelin Guide has recognised this approach, awarding the restaurant a Recommended distinction for 2026.
