The story
At the Auerhahn Hotel on the shores of Lake Schluchsee, Brasserie Barbara offers a more relaxed counterpoint to the hotel’s fine-dining restaurant. The concept is straightforward: timeless classics, rethought with care. The kitchen team, led by Küchendirektor Yann Bosshammer, works with regional and seasonal ingredients, delivering German cuisine that feels both familiar and precise.
The menu changes with the seasons. In spring, white asparagus arrives from the Weingut Landmann in Freiburg-Waltershofen, served classically with hollandaise or as a tartare with elderflower vinaigrette. Year-round standouts include cold-smoked trout with apple-celeriac vinaigrette, beef tartare, and a roasted celery steak with mushrooms and parsnips. Hearty mains like braised ox cheek with mashed potatoes or whole grilled poussin with sweet potato purée round out the offering. Desserts stay close to tradition: crêpes Suzette, a warm chocolate fondant, and a slice of authentic Black Forest cake.
The dining room opens onto a winter garden with views of the Schluchsee. During the day, hotel guests can enjoy coffee and cake there; in the evening, the bar serves classic cocktails and regional beers. Brasserie Barbara welcomes dogs alongside their owners, and breakfast is served daily on the terrace in good weather.
The restaurant has earned a Michelin Recommended distinction, a recognition that speaks to the consistent quality of the cooking and the clarity of the concept. It is open daily from 12:00 to 20:30, closed Monday and Tuesday.
